Our bluefin tuna and swordfish are not raised. They live and feed freely in the open Adriatic, without formulated feed or routine aquaculture treatments. Every wild fish develops differently, which can bring natural variation in fat distribution, texture and flavour from one catch to the next.

Every fish we offer is caught by licensed Croatian fishermen we work with directly. There are no anonymous intermediaries between the boat and BLUE FINESSE. That relationship is what lets us speak to the origin of a specific fish, not just a species.

Ultra-freezing preserves colour, texture and quality.

Ultra-freezing at −60 °C is used to preserve the fish at extremely low temperature, helping retain its colour, texture and sensory quality until it is ready to be used. Wild Chunks and Cro-Toro are supplied superfrozen at −60 °C.
